- 3 cobs of fresh corn (cut corn from the cob)
- 1 can black beans, drained and rinsed (or other beans of your choice)
- 3 medium tomatoes, chopped
- handful of fresh cilantro, chopped
- 2 cloves garlic, minced
- about a capful of smoked paprika
- half a capful of dried oregano
- salt and pepper
Fold together in a bowl and serve.
As a main dish, serves 4-6. As a side dish, serves 8-10.
