Jenny’s Easy Chicken Soup Recipe


  • 1 rotisserie chicken from store
  • olive oil
  • 5 carrots (sliced using mandolin)
  • 3 celery stalks (sliced using mandolin)
  • salt and pepper
  • 3 garlic cloves, minced
  • about 1 tbs of dried oregano
  • 1 tbs chicken bouillon
  • 32 ounces chicken broth
  • 3 cups water

Drizzle olive oil in a pot over medium heat.  Add carrots, celery, garlic, salt, pepper, oregano, and chicken bouillon.  Fold a few times.  Add chicken broth.  Peel apart chicken from the bones and add to soup.  Heat until hot and serve.
